Meringue Chocolate Cheesecake
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason

cup chocolate wafer crumbs
3 tbsp butter, melted
2 tbsp sugar
24 oz cream cheese, softened
2/3 cup sugar
3 large eggs
1 cup mint chocolate chips, melted
1 tsp vanilla
3 large egg whites
7 oz marshmallow creme (1 jar)
the wafer crumbs, butter and sugar and the press into
bottom of 9-inch spring-form pan.
at 180°C for 10 minutes.
the cream cheese and sugar, mixing until well blended.
the eggs, one at a time, mixing well after adding
in the mint chocolate and vanilla and then pour into
at 180°C for 50 minutes.
cake from rim and cool before removing.
egg whites until soft peaks form.
add marshmallow creme, beating until stiff peaks form.
Carefully spread over top of cheesecake to seal.
at 230°C for 3 to 4 minutes or until lightly browned.
