Mint Meringue Chocolate Cheesecake

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

1 cup chocolate wafer crumbs
3 tbsp butter, melted
2 tbsp sugar
24 oz cream cheese, softened
2/3 cup sugar
3 large eggs
1 cup mint chocolate chips, melted
1 tsp vanilla
3 large egg whites
7 oz marshmallow creme (1 jar)


  • Combine the wafer crumbs, butter and sugar and the press into bottom of 9-inch spring-form pan.
  • Bake at 180C for 10 minutes.
  • Combine the cream cheese and sugar, mixing until well blended.
  • Add the eggs, one at a time, mixing well after adding each one.
  • Blend in the mint chocolate and vanilla and then pour into the crust.
  • Bake at 180C for 50 minutes.
  • Loosen cake from rim and cool before removing.
  • Chill in fridge.
  • Beat egg whites until soft peaks form.
  • Gradually add marshmallow creme, beating until stiff peaks form.
  • Carefully spread over top of cheesecake to seal.
  • Bake at 230C for 3 to 4 minutes or until lightly browned.
