Chocolate Toffee Cheesecake

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

2 cup vanilla wafer crumbs
6 tbsp butter, melted
14 oz caramels (1 bag)
5 oz (1 can) evaporated milk
1 cup chopped Pecans, toasted
16 oz cream cheese, softened
1/2 cup sugar
1 tsp vanilla
2 large eggs
1/2 cup semi-sweet chocolate chips,melted


  • Combine the wafer crumbs and the butter and the press into the bottom and sides of a 9 inch spring-form pan.
  • Bake at 180C for 10 minutes.
  • In a medium heavy saucepan, melt the caramels with the milk over a low heat, stirring frequently, until smooth.
  • Pour into the crust.
  • Top with pecans.
  • Combine the cream cheese, sugar and vanilla, mixing until well blended.
  • Add the eggs, one at a time, mixing well each time.
  • Blend in the chocolate and pour over the pecans.
  • Bake at 180C for 40 minutes.
  • Loosen cake from rim and cool before removing.
  • Chill in the fridge.
  • Garnish with whipped cream, additional chopped nuts and maraschino cherries.
