cup vanilla wafer crumbs
6 tbsp butter, melted
14 oz caramels (1 bag)
5 oz (1 can) evaporated milk
1 cup chopped Pecans, toasted
16 oz cream cheese, softened
1/2 cup sugar
1 tsp vanilla
2 large eggs
1/2 cup semi-sweet chocolate chips,melted
the wafer crumbs and the butter and the press into
the bottom and sides of a 9 inch spring-form pan.
at 180°C for 10 minutes.
a medium heavy saucepan, melt the caramels with the
milk over a low heat, stirring frequently, until smooth.
the cream cheese, sugar and vanilla, mixing until
the eggs, one at a time, mixing well each time.
in the chocolate and pour over the pecans.
at 180°C for 40 minutes.
