Chocolate Coconut Cheesecake

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

1 cup digestive biscuit crumbs
3 tbsp sugar
3 tbsp butter, melted
2 oz unsweetened baking chocolate
2 tbsp butter
16 oz cream cheese, softened
1 1/4 cup sugar
1/4 tsp salt
5 large eggs
1 1/3 cup flaked coconut (3.5 oz can)
1 cup sour cream
2 tbsp sugar
2 tbsp brandy


  • Combine the digestive crumbs, sugar and butterand the press into the bottom and sides of a 9 inch spring-form pan.
  • Bake at 180C for 10 minutes.
  • Melt the chocolate and butter over a low heat, stirring until smooth.
  • Combine the cream cheese, sugar and salt, mixing until well blended.
  • Add the eggs, one at a time, mixing well each time.
  • Blend in the chocolate mixture and coconut and pour into the crust.
  • Bake at 180C for 60 minutes or until set.
  • Combine the sour cream, sugar and brandy and spread over the cheesecake.
  • Bake at 150C for 5 minutes.
  • Loosen cake from rim and cool before removing.
  • Chill in the fridge.
