Recipe

It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
recipe is one such recipe. If you know where it originated,
or perhaps it is even yours, let me know and I will
add the necessary credits and acknowledgements.

Ingredients
1/2
cup butter, softened
3 x eggs
1/2 tsp baking powder
1/4 cup and 1 /12 tbsp cocoa
1 cup pecans, chopped
1 chocolate frosting
1/4 cup and 2 tbsp cocoa
1 tsp vanilla extract
1 cup sugar
3/4 cup all purpose flour
1 pinch salt
1 tsp vanilla extract
10 oz marshmallows
1/4 cup butter
1/4 cup and 3 tbsp warm milk
16 oz powdered sugar, sifted
Method
- Cream
the butter and gradually adding the sugar, beating
well as you do so.

Add the eggs, one at a time, beating well after each
addition.
- Sieve
the flour and baking powder and then combine with
the salt and the cocoa. Add to creamed mixture.
- Stir
in vanilla and pecans.
- Spoon
mixture into a greased 13 x 9 x 2 inch glass baking
pan. Bake at 180°C for about 15 minutes until
the top is barely soft to the touch.
- Remove
the cake from oven and cover top with marshmallows.
- Return
to oven for a further 2 minutes or until marshmallows
are soft.
- Spread
the marshmallows over the cake and immediately cover
with chocolate frosting.
- Let
frosting harden before cutting the cake into squares.
To
make the chocolate frosting:
- Cream
butter and add cocoa, mixing well.
- Gradually
beat in powdered sugar, adding warm milk as necessary,
until you achieve a spreading consistency.
- Spread
immediately over warm marshmallows.
