Butterscotch

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

Ingredients

1 cup granulated sugar
1 cup brown sugar
3/4 cup light corn syrup
1 cup water
1/3 cup butter
1 teaspoon vanilla

Method

  • Put sugar, syrup and water into a saucepan and set over direct heat.
  • Stir until the sugar is dissolved, then cook without stirring to the stiff ball stage (120C).
  • Add butter and cook to the medium-crack stage (138C) for soft butterscotch or to the hard-crack stage (149C) for brittle candy.
  • Remove from heat and add the flavouring and pour on to a greased slab.
  • Mark with knife while still warm and when cold break into pieces.
