TOMATO CHUTNEY |

It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
is one such recipe. If you know where it originated,
or perhaps it is even yours, let me know and I will
add the necessary credits and acknowledgements.

Ingredients
3 lb green tomatoes
2 onions
2 tbsps salt
1 1/2 pts vinegar
1/4 lb Demerera sugar
2 tsps grated horseradish (optional)
1 tsp mild curry powder
1 tsp mustard see
1 tsp celery seed
Method
- Wipe
the tomatoes and cut into thin slices.
- Place
in a bowl and sprinkle with the salt.
- Cover
with a cloth and leave for 12 hours.
- After
twelve hours (the following day) drain the moisture
from the tomatoes.
- Add
the chopped onions and horseradish to the tomatoes.
- In
a large pan bring the vinegar to boiling point together
with the spices and sugar.
- Add
the tomatoes, onions and horseradish to the boiling
vinegar and cook until a pulp which takes approximately
one hour.
