and Peppered Chilli Chicken |

long time ago now!
Back
then the internet was a very different place with much
more of an amateur feel to it. In a lot of ways it was
a pleasanter and more friendly place to hang out. For
those of us interested in food and cooking it was a
great opportunity to chat and share ideas with people
living in other parts of the world.
It
was also a time when everyone involved in cooking, whether
they were just a keen amateur, a busy mum, a grandmother
with a lifetime of kitchen experience or a professional
chef just starting a career in the kitchen or one who
was an old hand working at the stove, was happy to share
recipes so others could enjoy them.
This
is one of Alan Spedding's recipes. Alan has featured
on several TV cooking programmes as a keen amateur chef.
Hot
chilli, cracked black peppercorns and sweet paprika
give real bite to barbecued or grilled chicken breasts,
and it`s good with pork or fish, too.
Ingredients
4
large chicken breast fillets
1 tsp chilli powder
1 tsp sweet paprika
2 tsp cracked black pepper
1 tsp garlic salt
1 tbsp chopped fresh thyme
1 tbsp chopped fresh parsley
1/2 tsp salt
4 tbsp olive oil
Method
-
Allow the chicken to come to room temperature, preheat
the grill or light the barbeque.
- Meanwhile
mix together the spices, herbs, seasonings and half
of the olive oil, rub this mixture well into the chicken.
- Barbeque
or grill well for approximately eight minutes on each
side basting with the remaining oil.
