Hub-UK
first came into existence back in May 2000. Seems a long
time ago now!
Back
then the internet was a very different place with much
more of an amateur feel to it. In a lot of ways it was
a pleasanter and more friendly place to hang out. For
those of us interested in food and cooking it was a
great opportunity to chat and share ideas with people
living in other parts of the world.
It
was also a time when everyone involved in cooking, whether
they were just a keen amateur, a busy mum, a grandmother
with a lifetime of kitchen experience or a professional
chef just starting a career in the kitchen or one who
was an old hand working at the stove, was happy to share
recipes so others could enjoy them.
A
lot of the details of who contributed what have either
become blurred or disappeared over the years but the
recipes are still worthwhile either in their own right
or for the inspiration they might give.
This
is a refreshing crunchy salad which goes with many different
dishes and is especially good with barbecued food. Quantities
can be varied according to taste and availability of
ingredients. The following is based on a main course
salad for two people.
Ingredients
1
Fennel bulb
10 small radish or half a mooli
1 small red chilli
1 small green chilli
1 small bunch of spring onions
Bunch of fresh mint
Italian Dressing
Method
- Thinly
slice fennel and place in bowl for mixing.
- Thinly
slice radish lengthways (if using mooli slice into
2 inch long thin strips). Add to bowl.
- Chop
spring onions and add.
- De-seed
chillis and chop finely - add to other ingredients.
- Take
the leaves off five or six stems of mint and chop
finely before addding to the other ingredients.
- Mix
everything together and then add 2 tablespoons of
Italian Dressing (see below) or more according to
taste.
- Mix
together well and it is ready to serve.
Tips:
I
use Tesco's Italian Dressing from their Finest range.
It is not practical to keep all the ingredients for
making up dressings for day to day cooking unless
you are cooking for large numbers. Any similar dressing
will do. This is the description given to the dressing:
" A classic blend with balsamic vinegar, olive oil,
basil sauce and black olives".
