Salmon with Lemon Tarragon Sauce |

Hub-UK
first came into existence back in May 2000. Seems a long
time ago now!
Back
then the internet was a very different place with much
more of an amateur feel to it. In a lot of ways it was
a pleasanter and more friendly place to hang out. For
those of us interested in food and cooking it was a
great opportunity to chat and share ideas with people
living in other parts of the world.
It
was also a time when everyone involved in cooking, whether
they were just a keen amateur, a busy mum, a grandmother
with a lifetime of kitchen experience or a professional
chef just starting a career in the kitchen or one who
was an old hand working at the stove, was happy to share
recipes so others could enjoy them.
A
lot of the details of who contributed what have either
become blurred or disappeared over the years but the
recipes are still worthwhile either in their own right
or for the inspiration they might give.
This
recipe was from one of the recipe groups at www.egroups.com.
Ingredients
1/4
cup lemon juice
1/4 cup olive oil
2 cloves garlic, crushed
1/2 teaspoon salt
1/4 teaspoon black pepper
1 pound fresh 1 inch thick salmon fillet
2/3 cup sour cream
1/4 cup milk
1/4 cup minced green onions
1 teaspoon dried tarragon leaves or 1 tablespoon fresh
tarragon leaves
1/4 teaspoon salt
Method
- Combine
lemon juice, olive oil, garlic, 1/2 teaspoon salt
and pepper in shallow, non-reactive 11 x 7 inch baking
dish. Mix well.
- Add
salmon; turn twice to coat with marinade.
- With
salmon skin side up in baking dish, cover tightly
and refrigerate for 2 hours.
- Combine
remaining ingredients in small bowl; mix well. Cover
and refrigerate until ready to serve.
- Cut
salmon into 4 pieces. Place on grill and grill for
5 minutes or until fish begins to flake when tested
with fork.
- Serve
hot with chilled sauce spooned over each piece.
