Hub-UK
first came into existence back in May 2000. Seems a long
time ago now!
Back
then the internet was a very different place with much
more of an amateur feel to it. In a lot of ways it was
a pleasanter and more friendly place to hang out. For
those of us interested in food and cooking it was a
great opportunity to chat and share ideas with people
living in other parts of the world.
It
was also a time when everyone involved in cooking, whether
they were just a keen amateur, a busy mum, a grandmother
with a lifetime of kitchen experience or a professional
chef just starting a career in the kitchen or one who
was an old hand working at the stove, was happy to share
recipes so others could enjoy them.
This
is a
Hub-UK
recipe
which has been described by someone who has eaten it
as "the bestest ever pasta dish!"
Ingredients
140g
streaky bacon
130kg Italian Salami Milano
7 medium tomatoes skinned
125gms mushrooms
250 mls Double cream
500mls Ham stock
175kg grated Parmesan cheese
4 cloves of Garlic
Lg knob of butter
Parsley
Black pepper
Method
- In
a sauté or frying pan (I use a wok), melt a large
knob of butter.
- Chop
the bacon into small pieces and dice the salami very
small.
- Chop
garlic and add garlic, bacon and salami to pan.

Fry gently until bacon starts to crisp slightly.
- Add
the skinned tomatoes and turn up the heat.
- After
a couple of minutes add the Ham stock, mushrooms,
chopped parsley and black pepper to taste. (Do not
add salt as Ham stock and bacon are salty).
- Cook
over a high heat to reduce stock to a thick consistency.
- Add
cream and continue over high heat until sauce thickens
again.
- Add
grated parmesan and stir continuously until melted
and blended thoroughly.

Serve with fresh pasta. Depending on type of pasta
either stir together or pour over top.
