was a great inspiration when I first started working
on the idea of creating a recipe and cooking web site.
Not only did she encourage me but she also supplied
a great many recipes and other pieces which are featured
throughout the site. Her great achievement was to teach
me to cook risotto over the internet!
I never had the chance to meet Shirley, or even talk
to her, I regarded her as a good friend. It was with
great sadness that I learnt that she passed away in
Autumn 2004 and that there would be no more emails.
I think she will be sadly missed by a lot of people
like me to whom she gave such pleasure with the sharing
or her recipes. The pleasure my children have had from
her recipe for Strawberries
with Balsamic Vinegar and Mint - not to mention
the fights for seconds - has been a joy to behold.
small pkg. fine noodles
1 - 2 lbs. shrimp or crabmeat
3 medium onions, finely chopped
4 celery stalks, finely chopped
1 medium bell pepper, finely chopped
2 Tblsp. garlic, minced
3/4 lb. butter
1/2 - 3/4 cup Romano & Parmesan cheeses mixed
1 (8 oz.) block Velveeta cheese
1/3 bottle Hot Sauce (or to your own taste)
1 quart of 1/2 & 1/2
These spices are season to taste:
1/8 tsp. rosemary
1/8 tsp. oregano
1/8 tsp. thyme
1/2 tsp. Italian seasoning
1 tsp. black pepper
1/3 tsp. salt
a regular pasta boiling pot, boil noodles with salt.
Drain and set aside. DO NOT OVERCOOK noodles as they
will be baked.
a saucepan, saute onions, celery, bell peppers and
garlic in butter and a little olive oil until clear,
about 10 - 15 minutes.
seafood, seasoning and hot sauce, simmer for 10 minutes.
Velveeta and other cheeses in the pot, stirring until
some of the cream, stirring until smooth.
noodles in a baking dish and pour mixture over noodles
while mixing in the rest of the cream.
to taste, may need more spices (above) to you own
taste. This is the time to add more before baking.
at 350ºF in the oven for 15 - 20 minutes.
always add more cheese along with a little more cream
to make it richer. I also use fresh shrimp and crab
together - if you do mix them, don't add the crab
until the last 3 - 5 minutes.
