Calamari Ripieni
This recipe comes from Alfredo, who has his own website which features some really wonderful Italian recipes. A visit to his website is well worth it if Italian recipes are what you are after. All well laid out and easy to read.


12 small squid - cleaned & skinned - saving the tentacles
1 clove of garlic
2 anchovie fillets
1 tsp parsley - chopped
2 eggs - beaten
3 tbls of bread crumbs
olive oil
salt and pepper
lemon wedges

  1. Chop the tentacles fine with the anchovies, garlic, and parsley
  2. Mix the eggs with the bread crumbs, a pinch of salt, a 1/2 tsp of pepper and a tsp of olive oil
  3. Add the anchovy mixture and stir into a paste
  4. Stuff the squid and sew ends wih strong thread
  5. Sprinkle with salt and pepper
  6. Brush with oil & broil under moderate heat for 8 - 10 minutes turning and basting the other side & cooking another 8 minutes
  7. Remove thread & cut into 1 inch slices
  8. Serve with lemon wedges
