Recipe for :

Spaghetti alla Viateggina
This recipe comes from Alfredo, who has his own website which features some really wonderful Italian recipes. A visit to his website is well worth it if Italian recipes are what you are after. All well laid out and easy to read.


8 dozen small clams (mahogan or small little neck)
3 garlic cloves
1 cup of olive oil
1 small onion - chopped
1/2 cup dry white wine
2 cans of crushed tomatoes
1 small chilli pepper
1 tbls parsley - chopped
salt and pepper

  1. Place 2 tbls of oil in a sauce pan with the garlic clove
  2. Add clams & cook until they open
  3. Remove clams from their shells
  4. Strain the clam juice & set aside with the clams
  5. Heat the remaining oil
  6. Sauté the onion until browned
  7. Add wine & cook until wine reduces to half
  8. Add tomatoes & clam juice
  9. Season with salt and pepper to taste
  10. Cook at medium/simmer for 30 minutes
  11. Add the clams & parsley/
  12. Turn off heat and let sit while you drain the pasta

Serve on spaghetti
