Recipe for :

This recipe has been contributed by Kristin who is a friend of Shiley Kline's. Shirley had told me that Kristin had some particulartly good recipes for her favourite dish, salmon. I asked Shirley to persuade Kristin to send some of her recipes and this is what Kristin said when she sent the first one through:

"Hi my name is Kristin and my friend Shirley has asked, begged, pleaded and cajoled me until I sent you some recipes . . . LOL Salmon is my favorite fish".

Juice of 1  small lemon + 1 tsp of grated zest
Juice of 1 small lime + 1 tsp of grated zest
1/2 of a small yellow or white onion - minced
1/2 tsp honey
1 sm jalepeno seeded and minced
Non-stick spray

Method
  1. Arrange filets in a single layer in a glass pan (no metal)
  2. Mix all the juices and zests, the jalepeno, honey and onion.
  3. Pour over salmon and marinate covered on the fridge for 3 hours or overnight.
  4. Turn occasionally.
