WHOLE ROAST CHICKEN IN A PEANUT COCONUT SAUCE RECIPE

Ingredients

3 - 4 lb whole chicken

Sauce:
1 onion roughly chopped
2 cloves garlic roughly chopped
1 tablespn of chopped lemon grass
6 tablespns of roasted peanuts or peanut paste
1 teaspn salt
2 teaspn pepper
1 teaspn sugar
250 ml coconut milk
1 tablespn vegetable oil
Fresh coriander sprigs to decorate
2 tablespns water
3 fresh chillies (optional)

Method
  • Place chicken on roasting tray and cook at 180 cel approx 1.5 - 2 hours
  • 15 minutes from when chicken is cooked prepare the sauce
  • In food processor or mortar, make a paste out of the onion, garlic, lemon grass, peanuts, sugar, chillies and fish sauce
  • Fry paste in vegetable oil in large saucepan, then add coconut milk
  • Stir well and simmer for about 5 minutes until sauce thickens
  • Place cooked chicken in saucepan and carefully coat with sauce
  • Simmer for a few minutes more, be careful not to break up chicken
  • Remove to serving plate, spoon over sauce and decorate with coriander sprigs, serve with rice
