Les Amuse Bouche du Père Denis

1 French loaf (petit pain complet)
3 hard boiled eggs
4 anchovies with olive oil and capers
20 gr of finely grated cheese (Vieux Bruxelles)
A few shavings of black truffle
A little bit of rillette of goose or other
A few crab pieces
A few drops of lemon juice and 4 leaves of parsley
Basil and chilli Olive oil

  1. Using a glass, cut 16 circles in the sliced bread.
  2. Cut the hard-boiled eggs in thin slices.
  3. In a frying pan, pour the olive oil and add the bread to crisp on only one side. Remove them when they are crisp underneath.
  4. Lay on each piece of bread, a slice of egg and garnish as described below:
  • 4 with a little bit of grated cheese and an caper anchovy
  • 4 with a few shavings of truffle
  • 4 with the rillettes, garnished with parsley
  • 4 with a few pieces of crab and 2 drops of lemon juice.

Serves 4
