Crazychef says "A recipe brought back from my travels in the Far East".


3 - 4lb duck cut into pieces
3 cloves garlic
10 peppercorns
1 coriander plant
4 tablespns sugar
2 tablespns soy sauce
2 teaspns salt
150g dried chinese mushrooms soaked in red wine overnight
2 teaspns ground ginger
6 carrots peeled and roughly sliced
4 - 6 hard boiled eggs preferably duck eggs

  • In a food processor make a paste from the garlic, peppercorns and coriander
  • In large saucepan add sugar and 1 tablespn water, heat until it caramelises into brown syrup
  • Remove from heat and stir in 125ml warm water
  • Add duck and return to medium heat, coat duck in liquid and brown
  • Add soy sauce, salt and paste and enough water to cover duck
  • Bring to the boil, add mushrooms and ginger, reduce heat and simmer for 40 minutes
  • Add carrots and egg simmer till duck is tender about another 20 minutes
  • Place in srving dish and serve with rice

Serves 4
