WHOLE FISH WITH CHILLI AND GINGER RECIPE

Ingredients

3/4 to 1 lb whole fish such as snapper or bream
1 tablespn vegetable oil
1 clove garlic chopped
2 shallots sliced
2 tablespns finely chopped ginger root
2 teaspns fish sauce
2 tablespns sugar
1 tablespn ground tumeric
200 ml water
Juice of 1 lime
1 teaspn pepper
2 tablespn cornflour mixed with water to paste
1/2 chopped onion
2 sliced chillies
2 oz chinese dried mushrooms soaked in water and sliced
Fresh coriander to garnish

Method
  • Wash and trim fish, then grill, oven bake or steam
  • Whilst cooking fish, heat oil in wok or saucepan, add garlic, shallots, ginger, shallots, onion, chillies and sugar
  • Cook for a few minutes to allow flavours to blend
  • Add tumeric, pepper, mushrooms, water, lime juice and fish sauce
  • Stir and cook for a few minutes more
  • Thicken sauce with cornflour mix and remove from heat
  • Place fish on serving plate and pour over sauce, decorate with coriander and serve with rice
