Recipe for :

Hub Blackberries à la Saison
This is a Hub-UK recipe. When you love to cook you just have to create your own recipes! We wanted something light and special for a Summer's evening dessert and this is what we came up with. I must admit my wife was responsible for this as I was busy with the main course!


1/2 lbs Blackberries (fresh or frozen)
300 mls double cream
1 egg white
2 oz caster sugar
Sprig of Mint
Sponge finger biscuits


  1. If using fresh blackberries you will need to cook these first in a little butter. If using frozen blackberries, defrost and drain.

  2. Sieve blackberries to make a purée.

  3. Whip the cream until thick and stir into the blackberry purée.

  4. Beat the egg white, adding the sugar slowly until the mixture is stiff.

  5. Fold the egg white into the blackberry cream.

  6. Spoon mixture into individual glasses and leave in fridge to chill.

  7. To serve add a sprig of mint as decoration together with a sponge finger biscuit.
