BAKED HALIBUT WITH ROSEMARY RECIPE

Crazychef says "A wonderful dish that you can add pretty much any other ingredient to".

Ingredients

Olive oil
4 halibut steaks approx 8 - 10 oz each
Sea salt and pepper to taste
4oz shallots
1.5 lb tomatoes
3 - 4 tablespns chopped rosemary
Juice of 1 lemon or lime
Rind of 1 lemon or lime

Method
  • Brush 4 pieces of foil with olive oil
  • Sprinkle the fish with salt and pepper and lay them on the foil
  • Peel and finely chop the shallots, place over the fish
  • Skin the tomatoes, chop finely and place of the fish
  • Sprinkle the chopped rosemary and lemon rind over the fish
  • Sprinkle with lemon juice and a little olive oil and wrap parcels
  • Place in a roasting pan and oven bake for approx 25 - 30 minutes
  • Serve with new potatoes and a green salad
