My Best Berry Desert

"A wonderful dessert, easy to make also when the guests are many. When I choose to have a buffet dinner, I often serve this particular dessert in large, beautiful, oven-proof dishes with almond or oat cookies and whipped cream. Decorate with lots of lemon balm leaves.".


1 liter (good 1 qt) raspberries
8 egg yolks
Good 1/2 dl (1/4 cup) sugar
1/2 vanilla stick or 1/2 dl (1/4 cup) vanilline sugar
1 dl (1/2 cup) whipped cream
1 dl (1/2 cup) white wine

Lemon balm leaves


Make sure all ingredients are room-tempered. Spread out the raspberries in an oven-proof dish. Beat egg yolks and sugar. Beat the cream and mix with the wine and the seeds from the split-open vanilla stick (or the vanilline/vanilla sugar). Stir in this cream mixture in the egg batter and spread on top of the berries.

Bake at 180C/325F for about 15 minutes. Put small chunks of ice cream on top of the dessert and sprinkle with lemon balm leaves. Serve immediately. Enjoy!
