Anchovy grilled Salmon Steaks
This recipe comes from Alfredo, who has his own website which features some really wonderful Italian recipes. A visit to his website is well worth it if Italian recipes are what you are after. All well laid out and easy to read.


4 Salmon steaks
4 tablespoons Anchovy Butter
Parsley sprigs
Lemon wedges

Anchovy Butter:
6 anchovy fillets
2 tablespoons milk
6 tablespoons butter
1 drop tabasco sauce

  1. Pre-heat the grill to high heat.
  2. Oil the grill rack and place each steak to ensure an even heat.
  3. Place a small knob of Anchovy Butter (divide a quarter of the mixture in four) on each steak.
  4. Grill for 4 minutes.
  5. Turn the steaks with a fish slice and place another quarter of the butter among the steaks.
  6. Grill on the second side 4 minutes.
  7. Reduce the heat and allow to cook for a further 3 minutes, less if the steaks are thin.
  8. Soak all the anchovy fillets in milk.
  9. Mash in a bowl with a wooden spoon until creamy.
  10. Cream all ingredients together and chill.
  11. Serve with a neatly arranged pat of anchovy butter on top of each steak.
  12. Garnish with parsley sprigs and lemon wedges.
