Peaches with Mint and Cider

6 ripe peaches
fresh juice from 1 orange
fresh juice from 1 lime
2 tbs honey
4 tbs chopped fresh mint
1 1/4 dl (1/2 - 3/4 cup) cold apple or pear cider
1 fresh mint sprig for decoration
lime slices for decoration


Blanch the peaches for 10 seconds in boiling water. Take them up and splash them off in cold water. Peel the peaches and slice them lengthwise and remove the stones. Cut 8 of the peach halves in thin slices lengthwise and put them in a bowl. Put the remaining 4 halves in a mixer or food processor with the orange juice, lime juice, and honey, and puree the mixture. Mix in the chopped mint and pour the puree (sp) over the sliced peaches in the bowl. Cover and leave in a cold place for 2 hours.

Take up the peach slices with a perforated ladle and put on a serving dish. Stir in the cider in the puree in the bowl and spoon it over the peaches. Decorate the peaches with the mint sprig and lime slices just before serving. Enjoy!
