Crazychef says "You could replace the cheddar with any other cheese of your choice".


12 fresh scallops
8 oz monkfish tail cubed
1 leek thinly sliced
1/2 onion thinly sliced
100 ml white wine
2 tablespns brandy
2 teaspns dijon mustard
250ml double cream
3 - 4 oz strong mature cheddar

  • In a pan heat a little olive oil and fry the onion without colouring
  • Add the leeks and fry till soft
  • Add the monkfish and scallops and cook for furthur 1 minute
  • Deglaze pan with brandy and wine and reduce by half
  • Add the mustard and cream and cook till sauce thickens
  • Place mixture into 4 oven proof dishes, sprinkle with cheese and place under grill till melted and golden
  • Serve immediately with warm granary bread
