Caesar Salad RECIPE

"I love anything to do with food, wine or golf. Most people 'eat to live' and most others 'live to eat'. I prefer the 'live to eat'. Cooking is said to be therapeutic. In today's hectic world, unless we engross ourselves into something relaxing, we'll go crazy, by the end of the day. So just get into the kitchen and try to be creative using your imagination. It need not be a gourmet meal or anything grand just something simple and satisfying."

2 large cloves garlic, minced
1 teaspoon mashed anchovies or anchovy paste (optional, but
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons fresh lemon juice
1 tablespoon quality mayonnaise
1/4 cup virgin olive oil
8 cups torn or chopped romaine lettuce
1/2 cup (2 oz.) Shredded Imported Parmesan Cheese
Croutons (optional)

  • In small bowl, combine garlic, anchovy's salt and pepper.
  • Whisk in lemon juice and mayonnaise.
  • Slowly add oil, whisking until smooth and thickened.
  • In large bowl, gently toss together lettuce and dressing; add Parmesan cheese.
  • Toss gently.
  • Top with croutons and serve.

This is an eggless dressing.
