LAMB WITH A CHILLI AND MINT CRUST RECIPE

Crazychef says "Serve with vegetables and potatoes, a nice alternative to roast lamb".

Ingredients

1 soulder lamb

Crust:
6 tablespns breadcrumbs
4 tablespns mint sauce
1 tablespn chopped parsley
2 tablespns finely chopped chilli peppers
1 clove garlic
Salt and pepper

Method

  • Place lamb on rack in a roasting pan and cook at 180ºC for 20 minutes per lb.
  • To make the crust mix all the ingredients together to make a paste.
  • 30 minutes before the end of the roasting time, remove the lamb from the oven and spread the paste all over the joint, baste with some of the meat juices and return to oven.
  • Remove from oven when crust is golden brown, allow to stand and then serve.
  • Serve with fresh salad and garlic bread
