the orange and finely grate the zest. Squeeze
out the juice. Beat the cream and flavor with
the grated orange zest. Leave the cream in the
fridge until serving.
the bananas and split them lengthwise. Melt
the fat in a frying pan. Add the honey and approx
2 tbs orange juice. Stir and boil together for
a while. Dilute with another 2 tbs orange juice
and sprinkle with ground ginger.
in the bananas, cut side down. Lower the heat
and allow the bananas to simmer VERY slowly,
uncovered, for about 10 minutes. Baste occasionally.
lift up the bananas so that they won't fall
to pieces, and put them on a warm serving plate.
Pour over the sauce and decorate with chopped
walnuts. Serve the hot bananas immediately with
the ice-cold orange cream.
