Recipe for :

Strawberry Flan with Cinnamon Cream

2 3/4 dl (scant 1 1/2 cup) all-purpose
white flour
2 tbs sugar
125 g (4 oz) room-tempered butter
1 egg
1 tbs cream

Cinnamon creme:
2 1/2 dl (1 1/4 cup) cream
1 1/2 tbs maizena flour (cornstarch)
1/2 dl (1/4 cup) sugar
3 egg yolks
1 cinnamon stick
1 dl (1/2 cup) whipping cream

50 g (1 3/4 oz) dark chocolate
1 liter (good quart) strawberries

1 tbs powdered sugar
1 tsp ground cinnamon


Make the dough. Stir butter and sugar. Add egg, cream, and flour and quickly work to a dough. Allow to rest in a cold place for 1 hour.

Roll it out, very thin, and dress a pie dish with removable bottom. Prick with a fork. Attach strips of aluminum foil around the edge so that it won't fall down during baking. Leave in a cold place for 15 - 30 minutes. Heat the oven to 200ºC/400ºF.

Bake for about 10 minutes. Remove the aluminum foil strips and continue baking for 15 - 20 minutes until the pie crust is nicely colored and done. Allow to cool.

Melt the chocolate over a waterbath and brush an even layer of chocolate in the pie crust.

Make the cinnamon creme. Mix cream, cornstarch, sugar, and egg yolks in a saucepan. Add the cinnamon stick. Let simmer while beating on very low heat until thick and fluffy. Remove the cinnamon stick and allow to cool. Stir occasionally.

Trim the strawberries and split them. Put them tightly together in the chocolate-brushed pie crust. Beat the cream and mix with the cinnamon creme and spread this over the berries.

Turn on the grill heat in the oven. Mix powdered sugar and cinnamon and sift it over the cinnamon creme. Put the pie right under the grill, oven-door open, and grill for just a minute or so.

Allow the pie to stand in a cold place until serving. Enjoy!
