Indivia Brasata alle olive verdi (Braised endive with green olives)

4 heads of Belgian endive( white chicory)
100 g celery sticks
80 g onion
16 green olives, with stone
Pinch of sugar
1 lemon
Wine vinegar
Olive oil
Salt and pepper


  • Wash and drain the endive and cut in half longways
  • Stone olives, then lightly crush
  • Finely dice onion and celery and soften in 3 tbsp. olive oil, then add olives, sugar, salt and pepper, 3 tbsp. vinegar and the rind of half a lemon cut into fine shreds
  • Simmer the sauce for 3 minutes
  • Place endives in single layer in pot, sprinkle with salt and pepper, cover with sauce, add a ladleful of water or vegetable stock and a spoonful of olive oil
  • Bake at 200 degrees for about half an hour
  • Sprinkle with finely chopped parsley just before serving


  • Nice side dish for game, pork, stews , and also cold as antipasto.
