Carciofi e patate in umido (Stewed potatoes with artichokes)

400g potatoes
3 medium round artichokes
1/2 medium onion coarsely chopped
5 tablespoons oil
1/2 lemon
Salt, pepper


  • Cut peeled potatoes in small chunks
  • Prepare artichokes and place in water acidulated with lemon, to stop blackening
  • Sauté onion in olive oil with 1 tbsp. water till translucent but not coloured
  • Add drained vegetables, season and sauté briefly
  • Add 8 tbsps water, cover, turn flame down, and cook at simmer ( 20 to 40 mins) till tender
  • Serve warm
