Recipe for :

Deluxe Crab Cakes

1 pound claw or special crab meat
1/4 cup liquid egg substitute (or 1 egg, beaten)
2 tbsp reduced calorie mayonnaise
1/2 tsp dry mustard
1/8 tsp cayenne pepper
1/8 tsp Tabasco sauce
1/3 tsp freshly ground white pepper
3 tbsp finely chopped fresh parsley
1 1/2 tbsp fresh cracker crumbs
Vegetable oil for frying
Lemon wedges (optional)


In medium bowl, place egg, mayonnaise, mustard, cayenne, Tabasco and pepper and whisk until smooth. Add crab meat, parsley and crumbs and toss together lightly with a fork. Shape into 6 to 8 patties. Wrap in wax paper and chill for 30 minutes.

Fry in hot oil until golden brown on one side, about 4 to 5 minutes. Turn and repeat on other side. Drain on paper towels. Serve with lemon wedges.

Serves 6 - 8
