Minute Steak à la Bella

"In Swedish, these very thin steaks of meat are called "lövbiff", which translated into English would be "leaf steaks". Describes them pretty well, don't you think? This is a dish we often make when we want something really good to eat, since it contains the flavors we like very much: mustard and horseradish! "


4 large minute steaks, in all approx
400 g (good 3/4 lb)
1 dl (1/2 cup) thinly sliced leek or
4 tbs finely chopped onion
4 tsp capers
2 tsp grated horseradish
1 tbs mustard
1 tbs mayonnaise
butter or margarine
salt, white pepper


Put the steaks on a carving board. Stir together leek or onion with capers, horseradish, mustard, and mayonnaise. Spread this mixture on the steaks and fold them double. If you need to, you can tie a thin cotton string around them or attach with a toothpick.

Brown the fat until very lightly brown and fry the steaks until nicely colored, about 2 minutes. Turn them over, put on a lid, and fry the steaks for another 1 - 2 minutes. Flavor lightly with salt and pepper - remember that the horseradish and capers are rather salty in themselves.

Serve straight from the pan with boiled or raw-fried potatoes and green beans or peas - or a lovely salad of mixed vegetables. Enjoy!
