Francena said, "This is one of my favourite recipes that I discovered many years ago. It is very festive to serve for the holidays".

Ingredients

12 slices rye or whole wheat bread
6 slices mild onion
6 slices tomato
1/2 cup mayonnaise - can add a little sour cream
1/2 cup chopped chives, parsly or dill
Freshly ground black pepper

Method
  • Cut bread into 12 rounds - use a cookie cutter or a glass
  • Spread each round with mayonnaise mixture
  • Put an onion slice on 6 rounds
  • Sprinkle each onion with freshly ground black pepper
  • Top each onion with a bread round
  • Roll outside of each sandwich in mayonnaise mixture
  • Rollmayonnaise edge in chives, parsley or dill
  • Put tomato slice on each sandwich
  • Chill

Serve very cold

Note:
Cut bread into different shapes for various occasions. Use a heart cookie cutter for Valentine's Day or a bell for a wedding shower.

Alternate yellow and red tomatoes to create more colourful sandwiches.
