scampi, shell on, halved lengthwise
3/4 pound potatoes, peeled and thinly sliced
10 cloves garlic, peel on
2 onions, thinly sliced
2 tablespoons minced thyme
1/4 cup extra-virgin olive oil
the oven to 450° F.
a large bowl, toss the potatoes and onions
with the garlic, salt, pepper, 1 tablespoon
of the thyme, and 2 tablespoons of the olive
oil and transfer to a roasting pan.
from the oven and arrange the scampi over
the potatoes and onions, add the remaining
olive oil, and season once again with salt
to the oven for 10 more minutes.
with the remaining thyme and serve immediately.
