Roasted Garlic Scampi

24 scampi, shell on, halved lengthwise
3/4 pound potatoes, peeled and thinly sliced
10 cloves garlic, peel on
2 onions, thinly sliced
2 tablespoons minced thyme
1/4 cup extra-virgin olive oil

  • Preheat the oven to 450° F.
  • In a large bowl, toss the potatoes and onions with the garlic, salt, pepper, 1 tablespoon of the thyme, and 2 tablespoons of the olive oil and transfer to a roasting pan.
  • Roast for 10 minutes.
  • Remove from the oven and arrange the scampi over the potatoes and onions, add the remaining olive oil, and season once again with salt and pepper.
  • Return to the oven for 10 more minutes.
  • Garnish with the remaining thyme and serve immediately.

Serves 6
