I asked to be able to feature more of their recipes as I consider that they have an excellent selection which are clearly laid out and interesting - making them one of the leading UK recipe sites.

Ingredients

25g / 1oz Butter
2 Leeks, sliced
1 Onion, chopped
450g / 1lb Potatoes, peeled and diced
600ml / 1pt Vegetable stock
150ml / 5fl.oz. Single Cream
Salt and Black Pepper

Method
  • Melt the butter in a saucepan, add the leeks and onion and sauté gently until soft and transparent. Add the potatoes and stock and simmer for 10 minutes, or until the potatoes are cooked.

  • Pass through a sieve or place in a food processor and blend until smooth. Return to the pan, stir in the cream, salt and pepper and heat through gently. Serve hot.

Serves 4
