Stracciatella (Egg Soup)

1.25L / 2pints Vegetable Stock
2 Eggs
2 tbsp Semolina
2 tbsp Pecorino Cheese
1 tbsp Fresh Parsley, finely chopped
1/2 teasp Fresh Basil, finely chopped
A pinch of Sugar
A pinch of Nutmeg

  • Heat the stock to boiling.
  • Mix the other ingredients together and pour into the boiling liquid.
  • Stir for 4 minutes and serve immediately.

Serves 4
