Kale with Cream

675g / 1 1/2lb Kale
50g / 2oz Butter
3 tbsp Double Cream
Salt and Black Pepper
3 tbsp Vegetable Stock

  • Bring a large saucepan of salted water to the boil.
  • Wash the kale well and strip the leaves from the stalks.
  • Plunge the kale into the boiling water and cook until tender, about 20 - 25 minutes.
  • Drain well then finely chop.
  • In a saucepan combine the butter, cream, nutmeg, salt and pepper over a low heat. Add the chopped kale and the stock and mix well. Cook until heated through and the sauce is slightly reduced. Serve immediately.
