Lemon Chiffon Fluff

1 envelope unflavored gelatin
1 cup sugar
1/2 tsp salt
4 eggs, separated
1/3 cup lemon juice
2/3 cup water
1 tsp grated lemon peel
1/2 cup heavy cream, whipped
1 9-in baked pastry shell

  • Thoroughly mix gelatin, 1/2 cup sugar and salt in saucepan.
  • Beat egg yolks with lemon juice and water; stir into gelatin mixture.
  • Cook and stir over medium heat just to boiling point.
  • Remove from heat; stir in lemon peel.
  • Chill until partially set.
  • Beat egg whites until soft peaks form.
  • Gradually add 1/2 cup sugar, beating until stiff peaks form; fold in gelatin mixture.
  • Fold in whipped cream.
  • Pile filling in pastry shell.
  • Garnish with mint.


Serves 6 - 8
