Ingredients

envelope unflavored gelatin
1 cup sugar
1/2 tsp salt
4 eggs, separated
1/3 cup lemon juice
2/3 cup water
1 tsp grated lemon peel
1/2 cup heavy cream, whipped
1 9-in baked pastry shell

Method
- Thoroughly
mix gelatin, 1/2 cup sugar and salt in saucepan.
- Beat
egg yolks with lemon juice and water; stir
into gelatin mixture.
- Cook
and stir over medium heat just to boiling
point.
- Remove
from heat; stir in lemon peel.
- Chill
until partially set.
- Beat
egg whites until soft peaks form.
- Gradually
add 1/2 cup sugar, beating until stiff peaks
form; fold in gelatin mixture.
- Fold
in whipped cream.
- Pile
filling in pastry shell.
- Garnish
with mint.
