is actually a Welsh recipe which Recipes4us
produced for St David's Day.
Ingredients

35g
/ 1oz Butter
225g / 8oz Streaky Bacon
1 Onion, chopped
50g / 2oz Plain Flour
600ml / 1pt Milk
900ml / 1 1/2pt Fresh Cooked Cockles
5 tbsp Dry White Wine
3 tbsp Freshly chopped Chives
100g / 4oz Fresh White Breadcrumbs
75g / 3oz Caerphilly Cheese, grated

Method
- Preheat
the grill to hot. Melt the butter in a saucepan,
add the bacon and onion and sauté
until soft.
- Add
the flour and cook for a further minute, stirring
constantly. Remove from the heat and add the
milk a little at a time stirring. Bring to
the boil, continuing to stir, until thickened
and smooth.
- Add
the cockles, wine and chives and simmer for
2 - 3 minutes, blending well.
- Transfer
the mixture to a flame-proof pie dish.
- In
a mixing bowl, mix together the breadcrumbs
and cheese. Sprinkle on top of the cockle
mixture, lightly leveling off the top.
- Grill
for 5 minutes, until golden brown and bubbling.
Serve immediately.
