Recipe for :

Salmon Fillets Sautéed with Vermouth and Lemon Juice

1 pound fresh salmon fillets
10 tablespoons of Romeu extra virgin olive oil
1 small garlic clove crushed
1/4 cup chopped lemon thyme
2 tablespoons chopped Italian flat leaf parsley
Juice from 1 large lemon
1/2 cup vermouth
Sea salt
Freshly ground black pepper


  • In a large sauté pan, heat the olive oil over medium-high heat.
  • Place the salmon fillets in the pan and season with salt and pepper to taste.
  • Turning once, sauté for three to four minutes before adding the garlic, lemon thyme and parsley.
  • Sauté for an additional two minutes and add the lemon juice and vermouth.
  • Sauté for an additional two to three minutes or until the salmon is cooked.
  • Serve warm.
