Recipe for :

Pollo alla Piemontese

1 lb. chicken pieces
1 onion, chopped
1 lb. mushrooms, sliced
3 shallots or scallions
2 generous pinches sage
6 oz. white wine

  • Sauté chicken pieces and onion in butter over low heat until chicken is golden and onion is soft. Cover briefly while cooking.
  • Add shallots and sage, and continue to sauté.
  • When shallots are cooked, add mushrooms.
  • Sauté, adding wine, and finish cooking until chicken is tender.
  • Serve over rice or pasta.
