in White Wine Sauce

/ 1 1/2lb Broccoli
25g / 1oz Butter
1 Garlic Clove, crushed
2 tbsp Cornflour
150ml / 5fl.oz. White Wine
Salt and Pepper
1/4 teasp Dried Mixed Herbs
the broccoli into bite-sized pieces, wash well then
place in a pan of boiling salted water. Cook for 10
well, reserving 240ml / 8fl.oz of the cooking water.
Keep the broccoli hot whilst you make the sauce.
the butter in a saucepan then remove from the heat.
Add the garlic and cornflour and mix well.
add the wine and reserved cooking liquor.
the pan to a low heat and stir constantly until it
thickens. Add the herbs and season with salt and pepper.
the broccoli to the sauce and heat gently, mixing
well. Serve immediately.
