"This delicious salsa is named after the Sangre de Cristo Mountain range in New Mexico and Colorado. In Spanish, it means 'Blood of Christ'. Because I like cilantro so much, I usually use about three times as much as called for here".


6 large, ripe tomatoes (preferably Roma), finely chopped
2 large scallions (green onions), finely chopped
5 green chiles, seeded, chopped (I use jalapeno or Serrano)
6 sprigs fresh cilantro, chopped
4 to 8 cloves garlic, peeled and minced
1 T. fresh Mexican lime juice (or regular lime juice)
1 T. olive oil

  • Mix all ingredients together well.
  • Store covered in the refrigerator.
