Tim's Adobo Chicken

Here is one of my favorite chicken recipes. It uses chicken breasts, so be careful not to over cook. Remember, breasts are done at 165º. Use a meat thermometer if you are uncertain.


3 cloves Garlic, crushed
1 Shallot(s), minced
1/2 teaspoon Cumin
1/2 teaspoon Oregano
1/2 teaspoon Thyme
1 tablespoon Parsley, chopped
1 tablespoon Cilantro, chopped
1/4 cup Lime juice
2 1/2 tablespoon(s) Olive oil
Salt and pepper to taste

  • In a small food processor, add the garlic, shallot and herbs till it turns into a thick paste, then whisk in the oil and lime juice. Its going to look real slimy green.
  • Add chicken breasts and turn until all are coated.
  • Cover and refrigerate for 1 hour turning once or twice during that time.
  • Grill.
