Yakitori Chicken

Here is one of my favorite chicken recipes. It uses chicken breasts, so be careful not to over cook. Remember, breasts are done at 165º. Use a meat thermometer if you are uncertain.


4 tablespoon(s) Mirin(sweet sherry)
3 tablespoon(s) Soy sauce, dark
1 tablespoon Miso paste
1 tablespoon Sesame oil
1 tablespoon White vinegar
1 tablespoon Brown sugar, dark

  • Combine all ingredients and mix until sugar is dissolved.
  • Marinate chicken breasts overnight.
  • Use sauce as a mop and finally as a finishing glaze.
