Recipe for :

Mango Curry

This is one of the recipes that has been provided by Vandana who is very much a keen cook of Indian dishes. Hopefully there will be more to come!

"Here is one of the recipes I have written in reply to a request sent to me. It uses ripe mangoes as the main ingredient and is served with steamed Basmati rice".


1 Large onion, chopped
2 cloves
1" cinnamon
4 pepper
2 green cardamom
3 medium sized ripe Mangoes
1 tsp coriander seeds
1 tsp cumin seeds
3 flakes garlic
1" ginger, peeled and cut
1 tsp lemon juice
2 tbsp coriander leaves
1 tsp of chili powder
salt to taste
2 tbsp fresh coconut grated or desiccated coconut
2 tbsp oil

  • Heat oil, add cloves, cinnamon, pepper and cardamom and fry till they crackle.
  • Add onion and sauté chopped onion until pink.
  • Grind coconut, coriander seeds, cumin seeds, garlic and ginger adding a tsp of water if required to get a smooth paste.
  • Add the paste and chili powder to onion and sauté till the oil floats on top.
  • Pour in a cup of water and bring the curry to boil.
  • Peel and cut mangoes into large pieces. Add the pieces and lemon juice.
  • Simmer for 5 minutes.

Serve hot garnished with coriander leaves and with steamed Basmati rice.
