Recipe for :

Mademoiselle Elin's Chocolate Mousse

"This chocolate mousse is so excellent because you can make it one day in advance, and the wonderful taste of chocolate and orange makes it something extra! I got the recipe in a food magazine ages ago and we made it for dessert on a Sunday recently".

Ingredients

150 g (5 oz) dark chocolate
3 - 4 tsp powdered coffee
1/2 dl (scant 1/4 cup) freshly squeezed orange juice
grated peel from 1 orange
2 eggs, separated
2 dl (good 3/4 cup) heavy cream
1 - 2 tbs brandy or Cointreau (optional!)

Method
  • Melt the chocolate in a waterbath (means you have a saucepan of simmering water and then you put the chocolate in a bowl which you put on top of the saucepan, so that it melts from the heat of the steam).
  • Dissolve the coffee powder in the heated orange juice and add the orange peel.
  • Mix the melted chocolate with the coffee-orange mixture, then stir in the egg yolks and the cream, which you have first beaten until rather stiff (but not buttery).
  • Beat the egg whites stiff and gently fold them in.
  • Pour the mousse in portion bowls or cups - or in a larger bowl - and put in a cold place for a few hours or longer before serving.
