Elin's Chocolate Mousse

chocolate mousse is so excellent because you can
make it one day in advance, and the wonderful
taste of chocolate and orange makes it something
I got the recipe in a food magazine ages ago and
we made it for dessert on a Sunday recently".
g (5 oz) dark chocolate
3 - 4 tsp powdered coffee
1/2 dl (scant 1/4 cup) freshly squeezed orange
grated peel from 1 orange
2 eggs, separated
2 dl (good 3/4 cup) heavy cream
1 - 2 tbs brandy or Cointreau (optional!)
the chocolate in a waterbath (means you have
a saucepan of simmering water and then you put
the chocolate in a bowl which you put on top
of the saucepan, so that it melts from the heat
of the steam).
the coffee powder in the heated orange juice
and add the orange peel.
the melted chocolate with the coffee-orange
mixture, then stir in the egg yolks and the
cream, which you have first beaten until rather
stiff (but not buttery).
the egg whites stiff and gently fold them in.
the mousse in portion bowls or cups - or in
a larger bowl - and put in a cold place for
a few hours or longer before serving.
