Chilli Garlic Mushrooms

This recipes comes from Dancer and Graphic artist Martin James. Martin, who originally comes from New Zealand, is now living with his wife and children in Copenhagen as he is currently principal Dancer with The Royal Danish Ballet. Being so gifted it seems unfair that Martin should also be talented in the kitchen as well but he has agreed to share some of his recipes with us which is great news.

1/3 cup olive oil
50g (2oz) butter
6 cloves garlic, crushed
2 small fresh red chillies, finely chopped
1kg (2lb) mushrooms
1 tablespoons lemon juice
1/2 teaspoon cracked black pepper
2 tablespoons chopped, fresh parsley.

  • Heat oil and butter in large pan, add garlic, chillies and mushrooms, cook, stirring, about 5 minutes or until mushrooms are tender.
  • Add remaining ingredients.
  • Best made just before serving.

Serves 6 - 8
