Recipe for :

Berry Bread Pudding with Brown Sugar Sauce

Ingredients

1 1/2 loaves sweet french bread (3 - 5 days old) sliced
3 tbs butter
4 lg eggs
6cups whole milk
2cups sugar
2 1/2 tbs vanilla
2 1/2 tsp cinnamon
1 cup chopped strawberries
1 cup blackberries

Brown sugar sauce:
1 stick unsalted butter
1 cup packed brown sugar
1/3 cup water
1/4 tsp Pumpkin pie spice (or nutmeg)
1/8 tsp salt
1 beaten egg

Method
  • Spread butter all over 13 1/2" x 9" pan.
  • Arrange sliced bread in the pan slightly tight.
  • Whisk until frothy the eggs, then add the rest of the ingredients for the bread pudding.
  • Pour over the bread and let sit for and hour, smashing down with spatula every few mins to make sure that bread is absorbing all milk mixture.
  • After it is fairly absorbed add the berries making sure to get them in between the bread slices also.
  • Let sit so berries can absore mixture also.
  • Heat oven to 350º and place bread pudding dish in a water bath in the oven, cook for about an hour until the top of the bread pudding is puffy. Make sure to check on water in the bath as it will dissipate in the oven.

While the Bread pudding is cooking make the Brown sugar sauce.

Brown sugar sauce:

  • In saucepan melt the cube of butter, then add the brown sugar, water, spice and salt, whisking for about 1 - 2 minutes.
  • Take sauce off the heat.
  • Take the beaten egg and add a little of the suace to it to temper it so when the egg is added it will not scramble.
  • After the little bit of sauce is added to the egg, slowly whisk in the egg with the rest of the sauce and place back on heat for 1 minute to thicken sauce.

After the Bread pudding is out of the oven wait 10 - 20 minutes and add the brown sugar sauce over the Bread Pudding, let sit an additional 45 mins and serve.

Tastes Great cold or warm!
