Ingredients
1
ripe papaya, peeled, seeded & coarsely chopped
1/2 cup pineapple (or) orange juice
3 T canola oil
2 T lemon juice
2 tsp curry powder
1/2 tsp salt
Method
Purée
all ingredients in the bowl of a food processor
fitted with the steel blade. Transfer marinade
to a glass or ceramic dish and marinate 3 pounds
of chicken pieces in the refrigerator for 8 hours.
